Hey, what's for supper?

Just wondering what my fellow HepC'ers are eating and cooking since I get conflicting info AND everything is such a change for hubby, the most picky eater on the planet. When the nutritionist on the transplant team told him no more pizza, I think he was about ready to tell her to just forget the whole new liver thing. To him, life without pizza would be questionable at best. Seriously. But he is trying many new things he would never even consider before now.

Six months before his diagnosis' of cirrhosis/liver cancer/rectal cancer/returned HepC/prediabetes, he got dental implants and has been able to enjoy things he hasn't been able to eat in years with regular dentures. So every day has been a new adventure for me in the kitchen on crunchiness. But now with limitations of salt, sugar, carbs as well as my re-diagnosis of HepC, @ least we both need to be on the same basic diet.

I saw a post by Lucinda I believe, that I can't find now. She gave a few suggestions like peanut butter on a cracker w meds, which is working wonderfully for me as far as riba side effects. (Thx Lucinda, I think!) so I know diet makes a huge difference.

So, I ask as we did when I worked in the big insurance office, what are you making for supper?

Artichokes, the more the better. Organic salads, creative is great. Beets, walnuts, dried cranberries,....etc. Good oils like Olive. Cooking with coconut oil is the best.
I do not eat any hydrogenated dairy products, not even if organic. It will take weeks for the liver to process and our livers do not need it. Raw or nothing. I use Rice or Almond cheeses. My wife makes homemade pizzas pretty much from scratch. No animal fats in the meats, remove it and the skin of chicken. It contributes to fatty liver. Quinoa pastas is all we eat nowadays. Lots of good fruits. Someone says stay away from Orange juice and apples, because they can affect the treatment somewhat. I was making smoothies with fresh oranges and apples from the beginning and still got undetected at week 3-4 so I don't know for sure. There are good pizza recipes on the web. I would not eat things like pepperoni myself. Organic sausage is good, turkey kind better.  Costs more to eat like this but to me, my body and quality of life is worth it.

Thanks for a great list rainbowray! and before I leave for the day as a bonus!!. I'll be in the big city today, where real food is available.

I've been on coconut oil for months now. Love it. I bake with it and get a jar for my hair and skin. I drink smoothies with Greek yogurt, pineapple, bananas and a splash of OJ. I don't drink them often. Not sure where the liver and dairy stand, guess I can pull out the papers the dietitian from the transplant team gave us last Monday. The quick glance of the list we saw didn't contain anything he likes.

I looked for Quinoa last night to go with my de-skinned chix breast cooked on the George Forman grill, of course, not available in my tiny town.

As far as cost, considering how much money hubby has spent on Coca-Cola and red meat over his lifetime, I feel like we're getting a deal when we buy real food. Luckily, he gave up alcohol many years ago, sadly he replaced it with Coke.

Gratefully, he's off the coke and is taking his condition very serious. We've argued over his diet for years. He apologizes almost daily for doing this to himself, which is a topic for another day.
